Herb-Roasted Cashews

Ingredients: 

  • 13 oz raw cashews
  • 1.5 Tbsp. olive oil
  • 1 Tbsp. rosemary, chopped
  • 1 tsp. thyme, chopped
  • 1 tsp. kosher salt
  • Black pepper to taste


Directions:

1. Preheat oven to 375 F
2. Mix all ingredients together in a bowl; toss well 
3. Cover a rimmed baking sheet with parchment paper 
4. Spread cashews evenly over baking sheet 
5. Bake for 10 to 12 minutes, or until lightly browned
